What are the 7 layers in this keto-friendly dip?

  1. Taco beef: To make this dip keto-friendly we’re swapping out the refried bean base for taco-seasoned ground beef. Skip the store-bought mix and make your own homemade taco spice blend without the cornstarch (see recipe card for homemade taco seasoning recipe).
  2. Guacamole: Homemade or store-bought guacamole makes up the second layer. You want 2 avocados, or about 2-2½ cups guacamole.
  3. Sour cream: Full-fat sour cream brings a cool, creaminess in this third layer. For a bit of extra spice, mix in 1 tablespoon homemade taco spice before layering.
  4. Salsa: Chunky salsa caps off the layers of dips. You can use mild, medium, or hot. Just watch the carbs, as this is the most carb-heavy layer.
  5. Shredded cheese: Cheddar cheese is classic, but you could also use havarti or Monterey jack.
  6. Olives: Sliced black olives add a salty, briny bite. You can use canned black olives (which are actually processed green olives) or fresh pitted and sliced Kalamata olives.
  7. Green onion: Thinly sliced green onion makes up the top layer. Feel free to add in some sliced jalapeño for an extra spicy kick.

How to make keto 7-layer dip

Make the taco beef base. In a skillet over medium-high heat, brown the ground beef. Sprinkle the taco seasoning and salt over top and stir to coat. Pour in the beef broth and bring to a simmer. Simmer until the broth has evaporated and the meat is cooked through. Allow to cool completely before layering into the bottom of your serving dish.

Make the guacamole. In a medium bowl, mash together the avocado, lime juice, red onion, cilantro, garlic, and salt until smooth and incorporated. Spread the guacamole evenly over the base layer of taco beef.

Ingredients
  

  • cups sour cream
  • 1 cup low-carb chunky salsa
  • cup shredded cheddar
  • ¼ cup pitted black olives, sliced
  • 3 green onions, thinly sliced

For the taco beef

  • 1 lb ground beef
  • 2 tablespoons homemade taco seasoning
  • ½ teaspoon salt
  • ¼ cup beef broth

For the guacamole

  • 2 ripe avocados
  • 2 tablespoons fresh lime juice
  • 2 tablespoons diced red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, minced
  • ¼ teaspoon salt

Instructions

  • Make the taco beef base. In a skillet over medium-high heat, brown the ground beef. Sprinkle the taco seasoning and salt over top and stir to coat. Pour in the beef broth and bring to a simmer. Homemade Taco Seasoning: Skip the store-bought taco seasoning and make it at home for a low-carb spice blend without the added cornstarch.
  • Full Recipe: To make a full batch of taco seasoning (13 tablespoons) to use in all your favourite Mexican dishes, combine: 4 tablespoons chili powder + 2 tablespoons paprika + 2 tablespoons ground cumin + 2 teaspoons onion powder + 2 teaspoons garlic powder + 2 teaspoons dried oregano + ½ teaspoon cayenne pepper.
  • Single Batch: To make the 2 tablespoons homemade taco seasoning called for in this recipe, combine: 2 teaspoons chili powder + 1 teaspoon paprika + 1 teaspoon ground cumin + ½ teaspoon onion powder + ½ teaspoon garlic powder + ½ teaspoon dried oregano + 1 pinch cayenne pepper.
