These high-protein, low-carb pesto egg bites taste just like the Starbucks Egg, Pesto & Mozzarella Sandwich. For real!! I love the flavour combo in that sandwich, but I wanted something with fewer carbs that I could prep ahead for easy breakfasts during the week – so I turned those same flavours into egg bites instead. And honestly, this recipe is checking all the boxes!

Packed with high-protein cottage cheese, melty mozzarella, and topped with a dollop of fresh pesto, they’re cheesy, herby, and perfectly seasoned with a pinch of onion powder to mimic the flavour of the onion bun.

They’re seriously so satisfying and give you all the flavours of an Egg, Pesto & Mozzarella Sandwich with minimal carbs and an added boost of protein. Perfect for a casual brunch gathering or easy meal prep. Make them ahead and keep them in the fridge for up to 4 days for an easy grab-and-go breakfast.

Key Ingredients + Substitutions

  • Eggs – You’ll need 6 large eggs to make 12 egg bites.
  • Cottage cheese – Full-fat cottage cheese adds richness and a boost of protein. If you’re not a fan of cottage cheese, don’t worry! It gets blended with the eggs until smooth and creamy so there’s no lumps or curds. If you’d prefer, you can use 1 cup heavy cream instead.
  • Onion powder – Adds the slightest hint of onion flavour to mimic the onion bun used in the Starbucks Egg, Pesto & Mozzarella Sandwich.
  • Pesto – Fresh pesto adds a dollop of bright, herby richness to each egg bite. You can find fresh pesto in the refrigerated section of most grocers, located next to the fresh pasta. Or try my homemade sunflower seed pesto recipe, made without dairy or nuts.
  • Mozzarella – I recommend hand-grated mozzarella from a block, but store-bought shredded mozzarella (you know the bagged kind) works too. You could also use aged white cheddar, Swiss, or Monterey jack.

Ingredients
  

  • 6 eggs
  • 1 cup cottage cheese
  • ½ teaspoon salt
  • ¼ teaspoon onion powder
  • 1 cup shredded mozzarella
  • ¼ cup fresh pesto

Instructions

  • Preheat the oven to 325°F. Lightly grease all the cups of a standard 12-cup silicone muffin tin with olive oil.
  • In a blender, blend together eggs, cottage cheese, salt, and onion powder until smooth and combined, about 10 seconds.
  • Add a sprinkling of mozzarella to each cup, so that the cheese is divided evenly between the cups.
  • Carefully pour the egg mixture into the muffin cups, filling about halfway, so that the mixture is distributed evenly between the cups.
  • Spoon a dollop of pesto onto the center of each egg-filled cup.
  • Bake for 25 minutes, until the egg is puffy and just set. Remove from the oven and allow to cool for 10 minutes (or until the egg bites are cool enough to handle) before removing from the pan.

Notes

Storage: Store egg bites in an airtight container in the refrigerator for up to 4 days. Reheat in the oven or microwave until heated through.
