Combine all the syrup ingredients together in a pot.
Set the pot over medium heat and bring to a simmer, stirring often until the sugar has dissolved.
Reduce the heat to medium-low and simmer for 10 minutes, until slightly thickened.
Remove from heat and allow to cool for 30 minutes. The syrup will thicken as it cools.
Remove the cinnamon sticks and transfer the syrup to a glass jar.
For the Cinnamon Sugar Topping
Stir together the sugar and cinnamon until the cinnamon is well distributed.
Transfer to a spice jar with a shaker lid.

Storage: Store the syrup in an airtight container in the refrigerator for up to 3 weeks. Store the topping in an airtight container at room temperature for up to 3 months.Usage: To recreate your favourite Starbucks Cinnamon Dolce drinks at home, add 1 tablespoon syrup for every 1 cup of liquid and sprinkle with cinnamon sugar topping.
