Instant Pot Roast Beef French Dip Sandwich

This French Dip Sandwich made with Instant Pot Roast Beef is cheesy, melty, meaty, hearty, and dripping with delicious jus. The Instant Pot does all the work here, and delivers tender roast beef in a little over an hour while also producing softened onions and the broth for the jus. It doesn’t get much easier! And, it’s essentially a one-pot meal, so there’s very few dishes at the end of the day.

What is a French Dip?

French Dip (or Beef Dip) is a style of roast beef sandwich that’s served hot with a side of jus for dipping (hence the name “dip”). It’s typically served on a baguette or French bread roll and topped with caramelized onions and melty white cheese like Swiss, provolone, or gruyere. It is ALWAYS served with a side of jus, which is essentially just a thin gravy made from pan drippings. It’s warming and hearty and a great cozy meal for fall and wintertime.

How to make Instant Pot roast beef

Step 1: Season the beef. Remove the roast from the fridge and let sit at room temperature for 30 minutes. Pat the roast dry and season with salt and pepper.

Step 2: Sear the roast. With the Instant Pot set to “Saute”, sear the beef on all sides for 2-3 minutes each. Remove the beef from the pot and set aside. Temporarily turn off the Instant Pot.

Step 3: Add the seasonings. Add the onions to the pot and place the seared beef on top with the fat cap facing up. Add the broth, tamari, Worcestershire, garlic powder, onion powder, and herbs de Provence to the pot.

Step 4: Cook the roast. Lock the Instant Pot and set the valve to “Sealing”. Cook on “High Pressure” setting for 60 minutes (20 minutes per pound of beef). Turn off the Instant Pot and let sit for 10 minutes before releasing the pressure valve.

Step 5: Rest the roast. Transfer the meat to a plate. Tent it with foil and let it rest for 15 minutes before cutting the roast into slices or shredding the roast with two forks.

How to make French Dip sandwiches

Step 1: Make the jus. Strain the broth from the Instant Pot into a heat-proof bowl. Reserve the onions for the sandwiches. Return the broth to the pot and set the Instant Pot to “Saute”. In a small bowl, mix 1 tablespoon cornstarch with 1 tablespoon water to make a slurry. Pour the slurry into the pot with the broth. Stir to combine. Allow to cook for a few minutes to thicken.

Step 2: Assemble the sandwiches. Cut the baguettes into thirds to make 6 buns. Slice each bun down the middle. Stuff each bun with sliced or shredded roast beef. Top with grated cheese and reserved onions.

Step 3: Broil the sandwiches. Place the sandwiches on a baking sheet and broil on “High” for 2-3 minutes until the cheese is melted and bubbly. Serve with jus on the side.

  • 3 lbs beef roast
  • 1 teaspoon kosher salt
  • 1 teaspoon ground pepper
  • 3 yellow onions, thinly sliced
  • 3 cups beef broth (or mushroom broth)
  • ¼ cup tamari
  • 3 tablespoons Worcestershire
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon herbs de Provence (or Italian seasoning)

  • 2 baguettes
  • cups shredded Swiss cheese (or provolone, gruyere)
  • 1 tablespoon cornstarch
